Mint Chocolate Cupcakes

Cupcakes (makes 24, but since I only have a 12 cupcake tin, I make 12 + a 9" round cake)

2 cups sugar
1 3/4 cups flour
3/4 cup powdered cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 eggs
1/4 cup vegetable oil
1/4 cup butter, melted
2 tsp vanilla
1 Tablespoon peppermint
1 cup boiling water

Preheat oven to 350 degrees

Sift together dry ingredients
Mix in wet ingredients except for water
Beat two minutes on medium speed
Stir in boiling water

Fill cupcake cups

Bake 350 degrees for 18-20 minutes. Cool for 3 minutes in pan, then remove to cool completely.

Mint Frosting

6 Tablespoons butter, softened
2 2/3 cups powdered sugar
1/3 cups milk
1 tsp vanilla
1 tsp peppermint

Beat butter on low. Alternate adding sugar and milk and beat until smooth. Stir in flavorings.
